What is birria, anyway?
Birria is a slow-cooked Mexican stew, traditionally made by simmering beef for hours in a blend of dried chillies and spices until it falls apart. The magic happens when that tender beef goes into a tortilla, gets griddled with cheese until crispy, and comes with a cup of the cooking broth (consommé) on the side for dunking.
